Lemon Sponge Cake

Blend butter with sugar and flour; add egg yolks, lemon juice and peel and milk.
Fold in egg whites.
Pour into 9-inch pastry-lined pie pan.
Bake in hot oven (450°) for 8 minutes, then in moderate oven (325°) for 25 minutes.
