Lemon Rounds
Lemon Rounds is an moderately easy dinner. Made with 1 c. (1/2 lb.) butter or margarine, softened, 2 c. firmly packed brown sugar, 2 eggs, 2 tsp. grated lemon peel and 3 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cream margarine and sugar together until smooth.
Beat in eggs, lemon peel and lemon juice.
In a separate bowl, stir together the flour, salt and soda.
Stir into the margarine mixture.
Then stir in oats, dates and nuts until combined.
Drop by rounded tablespoonfuls on ungreased cookie sheets, about 2 inches apart.
Bake in a 350Β° oven for about 18 minutes or until dry in center and edges are well browned.
