Lemon Pudding Cake

Beat egg whites until stiff.
Add sugar and beat until very stiff.
Set aside.
Beat egg yolks and add milk, a little at a time.
Add sugar, lemon juice, rind, salt and lemon extract. Add flour.
Mix well.
Fold in egg whites.
Pour in buttered 9 x 13-inch glass baking dish.
Set in pan of water and bake at 300Β° for about 1 hour.
Cake will brown slightly when done.
