Lemon Mousse is an moderately easy dinner. Made with grated rind of 2 lemons, 5 tbsp. fresh lemon juice, 1 whole egg, 2 eggs, separated and 1 c. heavy cream, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Prepare Ahead
Combine lemon rind, juice, extract, egg yolks, egg, 1/2 cup sugar and cornstarch in double boiler.
Cook over hot water; stir constantly until thickened (6 to 8 minutes).
Remove from heat; put in bowl to cool.
Mixture must be totally cold before going onto next step.
