Lemon Marinated Chicken
Lemon Marinated Chicken is an moderately easy dinner. Made with 4 chicken breasts (boneless, skinless), 1 tbsp. fresh rosemary, chopped or 1 tsp. dried rosemary, 1/8 tsp. pepper, 2 tbsp. lemon juice and 1 tbsp. white wine or water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a shallow dish, combine all ingredients except chicken; mix well.
Add chicken; turn to coat.
Cover and marinate in refrigerator 20 to 30 minutes, the longer, the better.
Oil broiler pan and place chicken on prepared pan; broil 4 to 6 inches from broiler.
Cook 8 to 10 minutes on one side, basting with marinade.
Turn and continue cooking and basting 8 to 10 minutes longer or until chicken is fork-tender and juices run clear.
Can also be charcoal grilled.
Use same method as for broiling. Serves 4.
