Lemon Date Nut Cake
Lemon Date Nut Cake is an moderately easy dinner. Made with 1 lb. creamery butter, 1 lb. chopped pecans, 6 eggs, separated, 3 c. sifted flour and 1 lb. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream sugar and butter.
Add egg yolks, flour, extract and soda.
Mix 3 or 4 minutes on medium speed.
Add dates and pecans.
Fold in stiffly beaten egg whites.
Bake at 250Β° for 2 hours and 45 minutes to 3 hours in a stem pan lined with brown paper.
White raisins may be substituted for dates.
