Lemon Curd
Lemon Curd is an easy dinner. Made with 1 c. sugar, 6 tbsp. sweet butter (unsalted), 1/3 c. lemon juice, 1 tbsp. finely grated lemon rind and 3 whole eggs plus 1 egg yolk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In the top of a double boiler, combine the sugar, butter, lemon juice and lemon rind; mix well.
Place the pan directly over the heat, stirring constantly, and cook until the sugar is completely dissolved.
Remove from heat and cool slightly.
