Lemon Couscous
Lemon Couscous is an moderately easy dinner. Made with 2 1/4 c. water, 10 oz. couscous, 1 large chopped tomato, 1 c. seeded, peeled, chopped cucumber and 1 c. sliced and chopped scallions, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Bring water to a boil in saucepan; stir in couscous.
Remove from heat.
Cover and let stand for 5 minutes.
Fluff with a fork. Combine couscous with tomato, cucumber, scallions, parsley and mint; toss.
Combine lemon juice and next 4 ingredients.
Stir well.
Pour over couscous mixture and toss.
Yields 8 (1-cup) servings.
