Lemon Christmas Cake
Lemon Christmas Cake is an moderately easy dinner. Made with 6 eggs, 1 lb. butter, 4 c. self-rising flour, 1 oz. lemon flavor and 1/2 lb. candied cherries, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Separate egg yolk from white.
Cream butter, egg yolks and sugar; add 2 cups flour.
Beat well.
Add lemon flavor in another large bowl.
Add cherries, pineapple and nuts; mix well.
Beat egg whites.
Fold in the remaining 2 cups flour.
Then combine all together.
Put in 325° oven for 1 hour, then turn oven to 250° for another hour or until cake is golden brown.
Cook in a tube pan.
