Lemon Chip (Drop) Cookies is an moderately easy dinner. Made with 1 c. shortening (part butter), 1 c. granulated sugar, 2 eggs, 2 tsp. lemon extract and 4 tsp. grated lemon rind, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Mix together thoroughly the shortening, sugar, eggs, extract and lemon rind.
Sift flour, soda and salt; stir into the first mixture.
Then add chopped nuts and lemon chips.
Drop by rounded teaspoonful 2-inches apart on lightly greased cookie sheet.
Bake at 375Β° for 10 to 12 minutes or until lightly browned.
Cool slightly and remove from cookie sheet.
Yields about 6 dozen.
