Lemon Chicken
Lemon Chicken is an moderately easy dinner. Made with 3 whole chicken breasts, boned, skinned and halved, 1 1/2 c. unbleached flour, 1/4 c. butter, 1 1/4 c. olive oil and salt and pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Place each chicken breast between two sheets of plastic wrap and pound flat with a mallet.
Put flour into a plastic bag and drop chicken in to coat.
Melt butter and oil together in a large skillet.
Cook each chicken piece 3 to 5 minutes per side until cooked through.
Set aside.
