Lemon Chicken
Lemon Chicken is an moderately easy dinner. Made with 4 chicken breasts, skinned and boned, 2 tbsp. margarine, 1 tbsp. oil, 2 tbsp. lemon juice and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a skillet, saute chicken in margarine and oil.
When brown, remove chicken and discard margarine and oil.
Add sherry, lemon juice, salt and pepper.
Simmer 2 minutes, stirring constantly. Remove from heat and slowly add half and half.
Heat until sauce begins to bubble.
Add chicken and simmer 20 minutes until tender. Transfer to a serving dish and pour over top.
Garnish with lemon slices and parsley.
