Lemon Chicken
Lemon Chicken is an moderately easy dinner. Made with 1/3 c. lemon juice, 1/4 c. reduced-sodium soy sauce, 1 clove garlic, minced, 1/2 tsp. salt and 1/2 c. ground ginger, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine first 6 ingredients in a shallow container, stirring until well combined.
Add chicken; cover and marinate in refrigerator 2 to 3 hours, turning once.
Drain and discard marinade.
Transfer chicken to rack of a shallow roasting pan, coated with cooking spray.
Bake at 325Β° for 1 hour or until chicken is done.
Cut into 2 ounce slices.
Yields 14 servings at 1 slice each.
