Lemon Cake-Pudding
Lemon Cake-Pudding is an moderately easy dinner. Made with 1 c. sugar, 4 tbsp. flour, 2 tbsp. melted butter or margarine, cooled, 5 tbsp. lemon juice and grated rind of 1 lemon (1/4 c.), this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Combine sugar, flour and butter. Add lemon juice, lemon rind, egg yolks and milk. Mix. Fold in egg whites.
Pour into greased casserole (Pyrex).
Bake in pan of hot water at 350Β° for 45 minutes.
When done, dessert will have custard on bottom and sponge cake on top.
(Use whipped cream or Cool Whip on top when served, if you like.) Serves 8.
