Lemon Bisque
Lemon Bisque is an moderately easy dinner. Made with vanilla wafers, crushed, 1 (3 oz.) lemon gelatin, 1 1/4 c. boiling water, 3 lemons, squeezed and 1/2 tsp. peel and 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place wafers in bottom of a 9 x 13-inch dish.
Combine gelatin and boiling water and lemon juice, peel and sugar.
Place in refrigerator until it starts to set.
Whip evaporated milk until thick and fold into gelatin mixture.
Pour over crushed wafers. Sprinkle a few crumbs on top.
Let chill.
Yields approximately 14 pieces.
