Lemon Bisque
Lemon Bisque is an moderately easy dinner. Made with 1 c. boiling water, 1 pkg. lemon jello, 1 large can evaporated milk, chilled, juice of 1 lemon and grated rind of 1 lemon, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Add the boiling water to the jello, mixing well, and refrigerate until slightly thickened.
In large mixing bowl, whip the chilled milk and add lemon juice, rind and sugar.
Fold the thickened jello into the milk mixture.
Line the bottom of a 9 x 13-inch dish with 3/4 cup graham cracker crumbs.
Pour the jello mixture into this.
Sprinkle the rest of the crumbs over the top. Store in the refrigerator.
