Lemon Bars
Lemon Bars is an moderately easy dinner. Made with 1 1/2 c. plus 3 tbsp. unsifted flour, 1/2 c. confectioners sugar, 3/4 c. cold butter or margarine, 4 eggs, slightly beaten and 1 1/2 c. granulated sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°.
In a medium bowl, mix 1 1/2 cups flour and confectioners sugar; in butter or margarine until crumbly.
Lightly greased 13 x 9-inch pan. Bake 15 minutes.
In a large bowl, mix eggs, granulated sugar, baking powder, lemon juice and 3 tablespoons flour.
Mix well and pour over crust.
30 minutes (until golden brown).
Cool and
Sprinkle confectioners sugar. Store, covered, in refrigerator.
Makes 24 to 36 bars.
