Leek Soup
Leek Soup is an moderately easy dinner. Made with 4 large leeks, well cleaned and cut into 1-inch portions (use white part), 4 medium potatoes, peeled and cut up, 4 carrots, cut up, 1 large onion, cut up and 1 c. cabbage, cut up, this recipe delivers authentic, satisfying flavors. Cook all vegetables in water or broth to cover.
Season with salt and pepper.
When vegetables are tender, put them through the blender with the liquid.
Blend until smooth.
