Lebkuchen
Lebkuchen is an impressive dinner. Made with 2 c. brown sugar, 1 c. strained honey, 1/4 c. water, 8 c. sifted flour and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine brown sugar, honey and water in saucepan; bring to a boil and boil 5 minutes.
Sift flour, salt, soda and spices together; combine with sugar mixture.
Beat thoroughly.
Add eggs, fruits and almonds; mix well.
Shape into loaf; wrap in aluminum foil.
Place in refrigerator for 2 to 3 days to ripen.
Roll out to 1/4-inch thickness; cut into bars (1 x 3-inch).
Place on greased cookie sheet.
Bake 15 to 20 minutes in moderate oven (350Β°).
When cool, spread with transparent icing made by adding boiling water to confectioners sugar and vanilla.
Yields 10 dozen cookies.
