Lancaster Corn Chowder
Lancaster Corn Chowder is an moderately easy dinner. Made with 3 to 4 tbsp. butter or margarine, 2 c. chopped onions, 6 boneless chicken breasts, cooked and chopped in bite sized pieces, 1 large can corn, undrained and 3 qt. chicken stock or water, this recipe delivers authentic, satisfying flavors. In a large stockpot, saute onion in butter until tender, but not browned.
Add remaining ingredients and simmer for 1/2 hour. Adjust seasonings.
Bring to a rapid boil and add Granny's Rolled Dumplings.
Reduce heat to medium-low.
Cover and simmer for 25 to 30 minutes or until dumplings are done.
Serve with cornbread.
