Toast mung beans or mung bean flour until nutty and dry.
Sift with powdered sugar, salt, and a little tapioca starch.
Moisten gradually with coconut milk and vanilla until the mixture packs together.
Press firmly into small decorative molds.
Dry or bake gently until the cookies hold their shape and stay pale.
