Saute onion and mushrooms in oil until limp.

Cut 4 (12-inch) squares of aluminum foil and oil tops.

Scatter sauteed onions and mushrooms in the middle of each foil square.

Place salmon fillets on top, skin side down.

Whip egg yolks and 1 cup vegetable oil to foamy stage.

Salt and pepper to taste.

Spoon sauce over fillets. Fold and seal packets securely and place in baking dish.
