Melt a knob of butter in frying pan.

Add Kipper fillets and fry gently for 10 minutes or until fish is soft and will flake with a fork.

Remove from pan, leave to cool, then remove any skin and large bones.

Put Kipper fillets in bowl and mash with a fork. With a wooden spoon, beat the remaining ingredients.

Add black pepper to taste; beat until pate is quite smooth.

Spoon into container.
