King Ranch Chicken
King Ranch Chicken is an moderately easy dinner. Made with 1 whole chicken, boiled, deboned and chopped (reserve stock), 6 corn tortillas, shredded cheddar cheese, 1 can cream of mushroom soup and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In large saucepan, mix together soups, Ro-Tel tomatoes, onion, green pepper and chicken stock.
In 13 x 9-inch greased pan, layer corn tortillas, chicken, shredded Cheddar and soup mixture.
Repeat layers and top with shredded cheese.
Bake at 350Β° for 45 minutes or until bubbly.
I like to use Doritos instead of corn tortillas for a saltier taste.
