Kim's Carrot Cake
Kim'S Carrot Cake is an moderately easy dinner. Made with 2 c. self-rising flour, 2 c. shredded carrots, 4 large eggs, 1 1/2 c. sugar and 1 1/2 c. oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix eggs and sugar.
Add cinnamon and vanilla; mix well.
Add oil, then flour and mix well.
Stir in carrots, pineapple and nuts.
Preheat oven to 350Β°. Grease and flour 8 x 11 baking pan.

Cool when done.
