Kidney Bean Casserole
Kidney Bean Casserole is an moderately easy family-friendly dish. Made with 1/8 c. green pepper, 1/4 c. chopped onion, 1/8 c. chopped celery, 1 large clove garlic, minced and 1/2 can kidney beans, drained and rinsed, this recipe delivers authentic, satisfying flavors. Coat a large nonstick skillet with cooking spray.
Place over medium-high heat until hot.
Add onion and next 3 ingredients. Saute until tender.
Stir in beans and next 5 ingredients. Cover and cook 8 to 10 minutes, stirring often.
Place hot rice in 1-quart casserole. Spoon bean mixture over rice. Sprinkle with cheese.
Cover and let stand 5 minutes.
