Kat's Rice Pudding
Kat'S Rice Pudding is an moderately easy dinner. Made with 1 qt. milk, 1/2 c. rice (not instant), 2 eggs, 1/2 c. sugar and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Warm milk and add rice.
Simmer, covered, until rice is cooked.
Beat eggs and sugar until consistency of syrup.
Mix 3 or 4 tablespoons of hot rice mixture into egg mixture and add to pot. Cook about 1 or 2 minutes.
Add vanilla and raisins.
Sprinkle with cinnamon and nutmeg, if desired.
