With boning knife, cut into roast and use quarter garlic slivers to push into holes.

Cover roast with a sprinkle of cayenne pepper and salt.

Rub evenly over all of roast.

(Wash hands.) Lightly sprinkle with black pepper.

Place roast in a turkey-size baking bag and place in roasting pan.

Pour wine and sauce over roast inside bag.

Sprinkle chopped green onions over roast.

Place onion quarters, carrot pieces and potatoes over, around and beside roast.

Seal bag and with a large meat fork, poke 2 rows of holes into bag.

Bake at 325Β° for 2 1/2 hours, then check.

Should be very tender meat and potatoes.
