Jo's Banana Punch
Jo'S Banana Punch is an moderately easy dinner. Made with 4 c. sugar, 6 to 10 ripe bananas, 2 lemons, 1 (12 oz.) can frozen unsweetened orange juice and 1 (46 oz.) can unsweetened pineapple juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Boil sugar and 6 cups water for 3 minutes; cool.
Mash the bananas in blender or food processor; add juice of lemons immediately.
Add frozen orange juice and pineapple juice.
Mix all ingredients, except 7-Up together.
Freeze in containers (1 to 2-cup size).
When ready to use, partially thaw.
Place in blender; add an equal amount of 7-Up.
Blend on high speed until smooth.
It's ready to serve! The foamy 7-Up may be added right to the punch bowl.
Makes 64 (4-ounce) servings or 32 (8-ounce) servings.
