Cream sugar, shortening and egg together.
Add buttermilk. Sift dry ingredients together and add.
Add jam and mix well. Bake in a greased and floured cake pan, 8 x 8 x 2-inches in a moderate oven (350°) for 50 minutes or until done.
Or bake in two greased and floured 8-inch layer cake pans in a moderately hot oven of 375° for 25 minutes.
Spread with Seafoam Frosting.
