Jackstraw Eggplant
Jackstraw Eggplant is an moderately easy dinner. Made with 1 medium eggplant, peeled, 1 c. flour, 1 c. ice water, 1 slightly beaten egg and 2 tbsp. cooking oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Halve eggplant lengthwise; cut crosswise into 1/2-inch slices. Cut slices in 1/2-inch strips.
Beat together flour, ice water, egg, oil, sugar, salt and pepper.
Dip strips into mixture.
Fry a few at a time in enough oil to cover at 365Β° for 4 to 5 minutes, turning.
Drain on paper toweling.
Sprinkle with Parmesan cheese.
