Irish Raisin Bread
Irish Raisin Bread is an moderately easy dinner. Made with 2 c. skim milk, 2 tbsp. vinegar, 4 c. flour, 1/2 c. sugar and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Place vinegar in 3-cup mixing bowl.
Add enough milk to make 2 cups.
In separate bowl, combine flour, sugar, salt, baking soda and baking powder.
Add margarine, seed and raisins.
Mix together lightly with fork.
Add milk mixture, stirring with a fork, but do not overmix; this is important.
Put batter into greased loaf pan or 8-inch cake pan.
Pour melted margarine over top; sprinkle with 2 teaspoons sugar.
Bake at 375° for 10 minutes.
Lower to 350° and bake 55 to 60 minutes or until it tests done.
