Indian Love Squash
Indian Love Squash is an easy dinner. Made with 2 medium acorn squash, 1 (12 oz.) dry ginger ale, 4 tsp. butter or oleo and 1 tsp. fine herbs (thyme, oregano, sage, rosemary, marjoram and basil), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Scrub squash and cut in half lengthwise.
Remove seeds and stringy portion.
Pour ginger ale into large skillet.
Add squash, cut side down.
Cover pan and steam over medium heat 10 minutes. Arrange squash, cut side up, in shallow baking dish.
Sprinkle each squash with salt and pepper.
To each half, add a teaspoon butter and sprinkle with herbs.
Bake at 350Β° for 30 minutes, occasionally brushing with butter (both inside and outside of squash).
Makes 4 servings.
