Impossible Vegetable Pie
Impossible Vegetable Pie is an moderately easy dinner. Made with 2 c. chopped broccoli or sliced cauliflowerets, 1/2 c. chopped onion, 1/2 c. chopped green pepper, 1 c. shredded cheddar cheese and 1 1/2 c. milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat oven to 400Β°.
Lightly grease a pie plate.
Cook vegetables for 5 minutes in boiling water, then drain (or cook 2 minutes in microwave).
Mix vegetables, green pepper and cheese in pie plate.
Beat remaining ingredients until smooth, about 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate.
Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 to 40 minutes. Let stand 5 minutes before cutting.
Serves 6.
