Impossible Taco Pie
Impossible Taco Pie is an moderately easy dinner. Made with 1 lb. ground beef, 1/2 c. chopped onion, 1 (1 1/4 oz.) envelope taco season mix, 1 (4 oz.) can chopped green chilies, drained and 2 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat oven to 400°.
Lightly grease a 10-inch pie plate.
Cook and stir ground beef and onion in a skillet until brown.
Drain. Stir in taco season mix.
Spread in plate and sprinkle with chilies.
Beat milk, baking mix and eggs until smooth, about 15 seconds in blender on high or 1 minute with hand beater.
Pour on top of hamburger, onion and chilies.
Bake at 400° about 30 to 35 minutes or until knife inserted in center comes out clean.
Top with tomatoes and sprinkle with cheese.
Serve with sour cream, chopped tomatoes and shredded lettuce if desired.
Makes 6 to 8 servings.
