Impossible Green Bean Pie
Impossible Green Bean Pie is an moderately easy dinner. Made with 8 oz. fresh green beans, cut lengthwise into strips or 1 can short cut green beans, drained, 1 (4 oz.) can mushrooms (stems and pieces), drained, 1/2 c. chopped onion, 1 c. shredded cheddar cheese and 2 cloves garlic, crushed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Heat oven to 400Β°. Grease a 10 x 1 1/2-inch pie plate.
If using fresh green beans, cook in boiling salted water (1/2 teaspoon salt to 1 cup water), uncovered, for 5 minutes.
Then cover and cook 5 to 10 minutes or until tender.
Mix beans, mushrooms, onion, garlic and cheese in pie plate.
Beat remaining ingredients until smooth (15 seconds in blender on high or 1 minute with hand mixer).
Pour into plate.
Bake until knife inserted between center and edge comes out clean, 30 to 35 minutes.
Cool 5 minutes.
