Impossible Carrot Pie
Impossible Carrot Pie is an moderately easy dinner. Made with 1 c. finely grated carrots, 3/4 c. uncooked instant rice, 2/3 c. shredded cheddar cheese, 1/4 c. chopped onion and 1/2 tsp. dried basil leaves, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Heat oven to 400Β°.
Grease pie plate, 9 x 1 1/4-inches.
Mix carrots, rice, cheese, onion and basil; spread in plate.
Beat remaining ingredients until smooth; 15 seconds in blender on high or 1 minute with hand beater.
Pour into plate.
Bake until knife inserted between center and edge comes out clean, 30 to 35 minutes.
Cool 5 minutes.
Makes 5 servings.
