Imperial Chicken
Imperial Chicken is an moderately easy dinner. Made with 2 chickens, cut up, 1 loaf stale bread, 3/4 c. grated parmesan cheese, 1/4 c. chopped parsley and 1 clove garlic, crushed, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Remove crust from bread and grate bread into fine crumbs, using coarse side of grater.
There should be 2 cups crumbs. Spread out on flat pan to dry overnight.
Mix the crumbs with the cheese, parsley, garlic, salt, and pepper.
Dip each piece of chicken into melted butter, then into the crumb mixture.
Be sure each piece is well coated.
Arrange in open, shallow roasting pan. Put remaining butter over all and bake 1 hour, until fork-tender, in 350Β° oven.
Do not turn, but baste frequently with pan drippings.
Makes 4 to 6 servings.
