Icebox Pickles
Icebox Pickles is an moderately easy dinner. Made with 7 c. cucumbers, thinly sliced, 1/2 c. chopped onion, 1/4 c. green pepper, chopped, 2 c. sugar and 1 c. vinegar, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Soak wedge sliced cucumbers in water.
Add 1 tablespoon of salt to water.
Set in refrigerator overnight.
Next day, drain slices.
Mix onion, green pepper, sugar, vinegar and pickling spice together.
Put slices of cucumber in canning jars and pour mixture over cucumbers in each jar until covered.
Cap each jar. Let season in refrigerator for 2 weeks before eating.
Keep stored in the refrigerator.
