Icebox Muffins

Icebox Muffins is an moderately easy dinner. Made with 5 tsp. baking soda, dissolved in 2 c. boiling water, 1 qt. buttermilk, 1 c. shortening, 2 c. sugar and 4 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Set aside soda water and buttermilk.

Cream together shortening and sugar.

Add and beat in eggs, one at a time.

Add and alternate All Bran, Bran flakes, buttermilk mixture and flour. Begin and end with dry ingredients.

Add dates, nuts or raisins if desired (I do!!).

Set aside at least 24 hours (1 week best) in refrigerator.

Can be kept in refrigerator for 2 weeks.

Bake in 400Β° oven for 20 to 25 minutes. Makes 5 dozen.
