Icebox Muffins
Icebox Muffins is an moderately easy dinner. Made with 2 c. boiling water, 2 c. 100% bran buds, 1 heaping c. shortening, 3 c. white sugar and 4 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mix in a saucepan 2 cups boiling water and the 2 cups Bran Buds.
Set aside to soak.
Cream together the shortening and sugar.
Add eggs, one at a time, and then the buttermilk and soaked Bran Buds.
Transfer to a very large bowl or pan at least 6-quart size.
Mix and add the flour, soda and salt.
Fold in the 4 cups All-Bran.
Fill greased muffin tins, 1/2 full.
Bake at 400Β° for 15 to 18 minutes.
