Icebox Fruitcake is an moderately easy dinner. Made with 1 (1 lb.) box graham crackers, 1 (12 oz.) box vanilla wafers, 1 (3 1/2 oz.) can coconut, 1 box dark raisins and 1 box white raisins, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Crumble crackers and wafers together.

Drain cherries, reserving juice.

Add coconut, raisins, chopped pecans and cherries.

Mix thoroughly (mixes best by hand).

Add milk and reserved cherry juice.

Mix all ingredients together thoroughly. Press into lightly oiled tube pan or 3 foil lined loaf pans. Allow to set in refrigerator several hours.

Turn out and wrap well.

Store in refrigerator until ready to serve.

May also be frozen.
