Icebox Fruit Cake
Icebox Fruit Cake is an moderately easy dinner. Made with 1 lb. graham cracker crumbs, 1 lb. marshmallows, 1 c. evaporated milk, 1/2 lb. candied cherries and 1/2 lb. candied pineapple, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put milk and marshmallows in double boiler.
Heat, stirring until melted and mixed well.
Chop fruit and nuts; place in crumb mixture.
Add marshmallows and milk mixture to fruit and crumb mixture.
Stir until mixed well.
Pour mixture into a wax paper lined tube pan.
Press mixture firmly in pan.
Place in refrigerator.
Let stand about 2 days; remove from pan.
Keep uneaten cake in refrigerator.
