Icebox Fruit Cake
Icebox Fruit Cake is an moderately easy dinner. Made with 1 lb. english walnuts, 2 lb. pecans, 1/2 lb. candied cherries, 1/2 lb. candied pineapple and 1 box figs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a large pan, put your crushed crackers.
Have nuts in small pieces.
Cut candied fruit in pieces also.
Add sugar, butter, lemon extract and cinnamon.
This takes a lot of mixing together by hand.
Juice from the fruit will hold this together.
After mixing well, place in a Bundt cake pan, sprayed with Pam.
Press cake in pan firmly.
Trim top of cake with nuts/fruit.
Put in refrigerator overnight in cake pan, then you can remove from pan onto cake plate.
Keep refrigerated.
