Icebox Cookies
Icebox Cookies is an moderately easy dinner. Made with 1 stick butter, 1 1/4 c. packed brown sugar, 2 eggs, 1 1/2 tsp. vanilla and pinch of salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cream together butter and brown sugar.
Add eggs; beat until fluffy.
Add vanilla, salt and pecans.
Sift together baking soda and flour.
Add to mixture.
Shape with hands into 3 to 4 rolls.
Do this in a piece of floured plastic wrap or aluminum foil which can be wrapped around roll.
Store in the refrigerator until ready to slice and bake.
Bake at 350Β° on ungreased cookie sheet until lightly brown, about 10 minutes.
