Ice Cream Delight
Ice Cream Delight is an moderately easy dinner. Made with 1/2 gal. vanilla ice cream, softened, 1 c. coconut, 2/3 c. brown sugar, 2 c. rice chex, crushed and 1/2 c. pecans or walnuts, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix Rice Chex, coconut, pecans, sugar and margarine well.
Put 2/3 of mixture in a 9 x 12-inch cake pan.
Top with softened ice cream.
Put remaining topping on.
Freeze until firm.
Take out 5 minutes before serving.
