Hummingbird Cake
Hummingbird Cake is an moderately easy dinner. Made with 2 c. plain flour, 2 c. sugar, 1 tsp. salt, 1 tsp. soda and 1 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Do not use a mixer with this cake.
Very little mixing is required.
Combine dry ingredients in a large bowl.
Add eggs and oil, stirring just until moistened.
Stir in vanilla, 1 cup pecans, pineapple and bananas.
Spoon batter into 3 wax paper lined 9-inch pans.
Bake at 350Β° for 25 to 30 minutes.
Cool in pan 10 minutes.
Remove to rack and cool completely.
Fill and frost with Cream Cheese Frosting.
