Hot Potato Dish
Hot Potato Dish is an moderately easy dinner. Made with 2 c. hot or cold mashed potatoes, 1 (8 oz.) pkg. cream cheese, 1 small onion, finely chopped, 2 eggs and 1 tbsp. flour, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Pick a large bunch of poke greens; wash well.
Put into a large pot and cook for 20 minutes.
Pour off water.
Add more water and boil for 20 minutes longer; drain.
Fry 6 slices of bacon until done and remove from pan.
Add greens to pan with bacon grease. Cook about 15 to 20 minutes; salt to taste.
Add 4 or 5 beaten eggs and stir until eggs are done.
Good with cornbread.
Place bacon slices on side of bowl and eat with the greens.
