Hopping John
Hopping John is an moderately easy dinner. Made with 3 bacon slices, drained, 1 small onion, chopped, 1 stalk celery, chopped, 1 (15 oz.) can black-eyed peas and 1 c. water, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook bacon in medium saucepan until crisp.
Add onion and celery; cook until lightly brown.
Add peas with liquid.
Reduce heat; cover and simmer for 5 minutes.
Add water; bring to boil. Stir in rice.
Reduce heat, cover and let stand 5 minutes.
Fluff with fork.
