Hoppin' John is an moderately easy dinner. Made with 2 tbsp. olive oil, 1/2 c. chopped onion, 1/2 c. chopped celery, 1 clove garlic, minced and 2 cans (15 oz. each) black-eyed peas, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a large skillet, saute onion, celery and garlic in hot olive oil until onion is soft.
Stir in remaining ingredients. Heat to a boil; reduce heat and cover tightly.
Simmer 30 to 40 minutes or until liquid is absorbed.
